
To make Indian style rasam, you will need the following ingredients:
- 1 cup of water
- 1 cup of tamarind water (made by soaking tamarind in hot water for 15 minutes and then straining)
- 1/2 cup of cooked and mashed toor dal (split pigeon peas)
- 1/2 teaspoon of mustard seeds
- 1/2 teaspoon of cumin seeds
- 3 dried red chili peppers
- 1 tablespoon of finely chopped fresh coriander leaves
- 1/2 teaspoon of turmeric powder
- 1/2 teaspoon of red chili powder
- Salt to taste
Instructions:
- Heat a pan over medium heat and add the mustard seeds. When the seeds start to splutter, add the cumin seeds and dried red chili peppers.
- Add the mashed toor dal and stir well. Add the tamarind water and bring the mixture to a boil.
- Add the turmeric powder, red chili powder, and salt. Stir well.
- Reduce the heat to low and simmer for 10 minutes.
- Add the fresh coriander leaves and stir well.
- Serve hot with rice or as a soup.
Optional ingredients:
- 1/2 teaspoon of garam masala powder
- 1/2 teaspoon of fennel seeds
- 1/2 teaspoon of cumin powder
- 1/2 teaspoon of coriander powder
- 1 tablespoon of ghee (clarified butter)
You can add any of these ingredients to the pan along with the mustard and cumin seeds, and fry for a minute before adding the mashed toor dal. This will add extra flavor to the rasam.
