Sambar is a popular South Indian dish made with lentils, vegetables, and spices. Here is a recipe you can try at home:
Ingredients:
- 1 cup toor dal (split pigeon peas)
- 1 cup mixed vegetables (such as chopped carrot, green beans, drumstick, and pumpkin)
- 1 medium onion, finely chopped
- 1 medium tomato, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 green chili, finely chopped
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp fenugreek seeds
- 1 sprig curry leaves
- 1 tsp tamarind paste
- 1 tsp jaggery (unrefined cane sugar)
- Salt to taste
- 2 tbsp ghee (clarified butter) or oil
- 1 cup water
For the masala paste:
- 1/4 cup grated coconut
- 2 dry red chilies
- 1 tsp coriander seeds
- 1/2 tsp cumin seeds
- 1/2 tsp fenugreek seeds
- 1/4 tsp mustard seeds
- 4 to 5 curry leaves
- 1/2 cup water
Instructions:
- Rinse the toor dal and add it to a pressure cooker along with 1 cup of water. Cook for 3-4 whistles or until the dal is soft and mushy.
- Meanwhile, prepare the masala paste. In a small pan, dry roast the coconut, dry red chilies, coriander seeds, cumin seeds, fenugreek seeds, mustard seeds, and curry leaves until fragrant. Remove from the heat and let cool. Once cooled, grind the roasted ingredients along with 1/2 cup of water to form a smooth paste.
- Heat the ghee or oil in a pan over medium heat. Add the mustard seeds and let them splutter.
- Add the cumin seeds, coriander seeds, fenugreek seeds, and curry leaves. Saute for a few seconds.
- Add the chopped onions, green chili, and minced garlic. Saute until the onions are golden brown.
- Add the chopped tomatoes and saute until they are soft.
- Add the mixed vegetables and saute for a few minutes.
- Add the masala paste and saute for a few more minutes.
- Add the cooked dal, 1 cup of water, tamarind paste, jaggery, and salt. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 10-15 minutes, or until the vegetables are tender and the flavors have melded together.
- Serve hot with rice or roti.
